Broccoli Baked Potatoes

Broccoli Baked Potatoes

Servings: 4

Ingredients:

  • 4 medium baking potatoes
  • 4 lemon wedges
  • 4 teaspoon salt
  • 4 teaspoon pepper
  • 8 tablespoons hummus
  • 2 cups frozen broccoli, thawed

 

Directions:

  1. Wash the potatoes with a vegetables scrubber, then poke 4-5 holes in each potato with a knife. (This will help make sure the potatoes don’t explode when you bake them!)
  2. Place the potatoes on a large, microwave-safe plate and microwave for 15 minutes.
  3. When finished, open the microwave door and let the potatoes cool for about 5 minutes before removing the plate from the microwave.
  4. For each potato:
    1. Make a partial, lengthwise slit in the potato so that the skin opens on top, but the potato is still intact along the bottom.
    2. Push the sides to open the slit and expose the inside of the potato.
    3. Season the inside of the potato with the juice of 1 lemon wedge, 1 teaspoon salt, and 1 teaspoon pepper.
    4. Top the potato with 2 tablespoon hummus and ½ cup broccoli.
    5. Within the potato skin, use your fork to mix the potato insides together with the salt, pepper, lemon juice, hummus and broccoli.
    6. The coolness of the broccoli, hummus, and lemon juice will help cool the potato down enough to eat.
