Tuna Tomato Bowls

Tuna Tomato Bowls

Servings: 4

Ingredients:

  • 4 large tomatoes
  • 2 cans chunk light tuna, packed in water
  • 2 sticks celery, finely chopped
  • ¼ cup light mayonnaise
  • 1 finely chopped granny smith apple
  • ¼ cup chopped walnuts

 

Directions:

  1. Wash tomatoes and cut a slice off the top.
  2. Scoop out the insides of the tomatoes with a small spoon.
  3. Drain tuna and mix with celery, mayonnaise, apple and walnuts.
  4. Fill tomatoes with tuna mixture. If you have extra tuna mixture, serve on the side and scoop up with whole grain crackers.
