Whole Grain Strawberry Banana Nut Bread

Ingredients:
- 2 cups whole wheat flour
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup sugar
- 1 large egg
- 3 teaspoon vegetable oil
- 1 cup mashed ripe bananas (about 2 medium)
- ½ cup low-fat strawberry flavored yogurt
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts
Directions:
- Preheat oven to 350 degrees F.
- Spray an 8x4-inch loaf pan with cooking spray.
- In a large bowl combine flour, baking powder, baking soda, cinnamon and salt. In a medium bowl whisk sugar, egg and oil until well blended.
- Whisk in bananas, yogurt and vanilla.
- Pour the wet ingredients into the dry; add walnuts. Stir until blended.
- Scrape batter into the prepared pan.
- Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
- Let cool for 15 minutes.
- Remove from pan and cool on wire rack. When completely cool, cut into 12 slices.
