Whole Grain Strawberry Banana Nut Bread

Ingredients:

  • 2 cups whole wheat flour
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup sugar
  • 1 large egg
  • 3 teaspoon vegetable oil
  • 1 cup mashed ripe bananas (about 2 medium)
  • ½ cup low-fat strawberry flavored yogurt
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts

 

Directions:

  1. Preheat oven to 350 degrees F.
  2. Spray an 8x4-inch loaf pan with cooking spray.
  3. In a large bowl combine flour, baking powder, baking soda, cinnamon and salt. In a medium bowl whisk sugar, egg and oil until well blended.
  4. Whisk in bananas, yogurt and vanilla.
  5. Pour the wet ingredients into the dry; add walnuts. Stir until blended.
  6. Scrape batter into the prepared pan.
  7. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  8. Let cool for 15 minutes.
  9. Remove from pan and cool on wire rack. When completely cool, cut into 12 slices.
