Stir-Fry Buried Treasure

Ingredients:
- 1 cup brown rice
- 2 cups broccoli florets
- 2 cups carrot slices
- 1 pound boneless, skinless chicken breast, cut into bite-size pieces
- 2 tablespoons canola oil, separated
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Directions:
- Cook brown rice according to package directions.
- In a large nonstick skillet, cook the chicken pieces in 1 tablespoon canola oil for 10-15 minutes, until no longer pink.
- Remove the chicken pieces (set aside in a small bowl) and sauté the broccoli and carrots in a tablespoon of canola oil for about 10 minutes.
- Add the chicken pieces and sprinkle with 1 tablespoon of soy sauce and 1 teaspoon of sesame oil.
- Cover and cook for 5 more minutes.
- Divide the chicken and vegetable mixture evenly among 4 serving bowls.
- Then ”bury” the chicken and vegetable mixture with rice.
- Say “Argh!” as you dig in with your fork to find the buried treasure – no map required!
