Stir-Fry Buried Treasure

 

Prep Time: 40 minutes

Servings: 4

Ingredients:

  • 1 cup brown rice
  • 2 cups broccoli florets
  • 2 cups carrot slices
  • 1 pound boneless, skinless chicken breast, cut into bite-size pieces
  • 2 tablespoons canola oil, separated
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

 

Directions:

  1. Cook brown rice according to package directions.
  2. In a large nonstick skillet, cook the chicken pieces in 1 tablespoon canola oil for 10-15 minutes, until no longer pink.
  3. Remove the chicken pieces (set aside in a small bowl) and sauté the broccoli and carrots in a tablespoon of canola oil for about 10 minutes.
  4. Add the chicken pieces and sprinkle with 1 tablespoon of soy sauce and 1 teaspoon of sesame oil.
  5. Cover and cook for 5 more minutes.
  6. Divide the chicken and vegetable mixture evenly among 4 serving bowls.
  7. Then ”bury” the chicken and vegetable mixture with rice.
  8. Say “Argh!” as you dig in with your fork to find the buried treasure – no map required!
