Spinach Omelet

Spinach Omelet

Servings: 1

Ingredients:

  • 2 eggs, beaten
  • 1 cup fresh spinach
  • 1 teaspoon olive oil
  • ½ cup shredded mozzarella cheese
  • salt and pepper to taste

 

Directions: 

  1. Wash and dry the spinach.
  2. Drizzle the olive oil into a medium skillet and pour in the beaten eggs.
  3. Cook over medium heat until egg is almost set – if you cover the pan it will help to top get cooked thoroughly.
  4. Top with spinach and mozzarella, and cover again until spinach is wilted and cheese is melted.
  5. Fold over and serve!
