Spinach Omelet

Ingredients:
- 2 eggs, beaten
- 1 cup fresh spinach
- 1 teaspoon olive oil
- ½ cup shredded mozzarella cheese
- salt and pepper to taste
Directions:
- Wash and dry the spinach.
- Drizzle the olive oil into a medium skillet and pour in the beaten eggs.
- Cook over medium heat until egg is almost set – if you cover the pan it will help to top get cooked thoroughly.
- Top with spinach and mozzarella, and cover again until spinach is wilted and cheese is melted.
- Fold over and serve!
