Ingredients:
- 1 pound fully cooked jumbo shrimp, tails off
- 1 large avocado, peeled and cut into chunks
- juice of one lemon or lime
- 2 tablespoons chopped cilantro
- ¼ cup olive oil
- 4 cups washed lettuce, cut into bite-sized pieces
Directions:
- Rinse the shrimp in cold water and drain.
- Combine with other ingredients and toss.
