Shrimp and Avocado Salad

Ingredients:

  • 1 pound fully cooked jumbo shrimp, tails off
  • 1 large avocado, peeled and cut into chunks
  • juice of one lemon or lime
  • 2 tablespoons chopped cilantro
  • ¼ cup olive oil
  • 4 cups washed lettuce, cut into bite-sized pieces

 

Directions:

  1. Rinse the shrimp in cold water and drain.
  2. Combine with other ingredients and toss.
