Queso-Crazy Quesadillas

Servings: 4

Ingredients:

  • 1 ripe avocado, chopped
  • 1 medium tomato, chopped,
  • 1 green onion, chopped
  • Lemon juice
  • Salt and pepper
  • 4 whole wheat tortillas
  • ½ cup reduced-fat, shredded cheddar cheese
  • ½ cup reduced-fat, shredded jalapeño jack cheese

 

Directions:

  1. Mix together the avocado, tomato, and green onion. Sprinkle with lemon juice, salt and pepper.
  2. Spray a griddle with non-stick cooking spray.
  3. Heat over medium heat for 2-3 minutes.
  4. Place a tortilla on the griddle or pan, and cover with 1/8 cup of each of the cheeses.
  5. When cheese is melted, transfer to a plate and top with ¼ of the avocado mixture.
  6. Fold the quesadilla in half and cut into 3-4 sections.
  7. Repeat with remaining tortillas and cheese.
