Chocolate Chip Pumpkin Cookies

Servings: 2 dozen cookies

Ingredients:

  • 1 ½ cup white enriched flour
  • ¼ cup toasted wheat germ
  • ¼ cup oat bran
  • 1/8 teaspoon salt
  • 1 ½ teaspoon pumpkin pie spice
  • 1 ½ teaspoon baking soda
  • ½ cup molasses
  • ½ cup light brown sugar
  • ½ cup canned pumpkin
  • 1 12-ounce bag semi-sweet chocolate chips

 

Directions:

  1. Preheat oven to 350 degrees F.
  2. Lightly grease two baking sheets with canola oil spray.
  3. In a medium bowl, mix flour, wheat germ, salt, pumpkin pie spice, and baking soda. Set aside.
  4. In a large, nonstick saucepan, heat molasses just to boiling. Remove from heat. Add light brown sugar; stir until dissolved. Stir in canned pumpkin.
  5. Add the wet ingredients to the dry ingredients.
  6. Fold in the chocolate chips.
  7. Use a tablespoon to measure out cookies – drop spoonfuls onto cookie sheets.
  8. Bake cookies about 8-10 minutes until firm. Remove from sheets and cool on wire racks.
