Chocolate Chip Pumpkin Cookies

Servings: 2 dozen cookies
Ingredients:
- 1 ½ cup white enriched flour
- ¼ cup toasted wheat germ
- ¼ cup oat bran
- 1/8 teaspoon salt
- 1 ½ teaspoon pumpkin pie spice
- 1 ½ teaspoon baking soda
- ½ cup molasses
- ½ cup light brown sugar
- ½ cup canned pumpkin
- 1 12-ounce bag semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees F.
- Lightly grease two baking sheets with canola oil spray.
- In a medium bowl, mix flour, wheat germ, salt, pumpkin pie spice, and baking soda. Set aside.
- In a large, nonstick saucepan, heat molasses just to boiling. Remove from heat. Add light brown sugar; stir until dissolved. Stir in canned pumpkin.
- Add the wet ingredients to the dry ingredients.
- Fold in the chocolate chips.
- Use a tablespoon to measure out cookies – drop spoonfuls onto cookie sheets.
- Bake cookies about 8-10 minutes until firm. Remove from sheets and cool on wire racks.
