Whole Grain Pita Pizzas

Ingredients:
- 4 whole-wheat pita breads (6-inch diameter)
- 2 tablespoons olive oil
- ½ tablespoon fresh garlic, minced
- 3 cups mozzarella cheese
- ½ cup each of: chopped bell peppers, chopped onions, sliced olives, chopped artichoke hearts
- 2 tablespoons grated Parmesan cheese
Directions:
- Place oven rack in the center of the oven and preheat to 350 degrees F.
- Brush ¼ tablespoon olive oil and sprinkle 1/8 tablespoon minced garlic over the top of each pita.
- Place directly on the oven rack and toast for 10 minutes.
- Carefully pull pitas out of oven and place on ungreased cookie sheets.
- Spread 3/4 cup mozzarella cheese and 1/8 cup of each veggie on each pita.
- Sprinkle ½ tablespoon Parmesan cheese and drizzle ¼ tablespoon olive oil over the top of each pita.
- Return pitas to the oven and bake for 10 more minutes, or until the cheese has melted.
