Whole Grain Pita Pizzas

Servings: 4

Ingredients:

  • 4 whole-wheat pita breads (6-inch diameter)
  • 2 tablespoons olive oil
  • ½ tablespoon fresh garlic, minced
  • 3 cups mozzarella cheese
  • ½ cup each of: chopped bell peppers, chopped onions, sliced olives, chopped artichoke hearts
  • 2 tablespoons grated Parmesan cheese

 

Directions:

  1. Place oven rack in the center of the oven and preheat to 350 degrees F.
  2. Brush ¼ tablespoon olive oil and sprinkle 1/8 tablespoon minced garlic over the top of each pita.
  3. Place directly on the oven rack and toast for 10 minutes.
  4. Carefully pull pitas out of oven and place on ungreased cookie sheets.
  5. Spread 3/4 cup mozzarella cheese and 1/8 cup of each veggie on each pita.
  6. Sprinkle ½ tablespoon Parmesan cheese and drizzle ¼ tablespoon olive oil over the top of each pita.
  7. Return pitas to the oven and bake for 10 more minutes, or until the cheese has melted.
