Nach-yo Typical Nachos

Nach-yo Typical Nachos

Servings: 4

Ingredients:

  • 1 medium yellow bell pepper
  • 1 medium red bell pepper
  • 1/2 cup canned black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup cooked brown rice
  • 1/4 cup low-fat shredded Mexican cheese mix

 

Directions:

  1. Cut peppers in half lengthwise and remove stems and seeds. Then cut each half into quarters.
  2. Arrange on a plate, insides facing up.
  3. In a microwave save bowl, mix the black beans with the cumin, chili powder and rice.
  4. Microwave on high for 1 minute, stirring halfway through.
  5. Top with cheese and microwave for 1 minute more.
  6. Top each pepper slice with 1 heaping tablespoon of the cheese, bean and rice mixture.
