Nach-yo Typical Nachos

Ingredients:
- 1 medium yellow bell pepper
- 1 medium red bell pepper
- 1/2 cup canned black beans, rinsed and drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup cooked brown rice
- 1/4 cup low-fat shredded Mexican cheese mix
Directions:
- Cut peppers in half lengthwise and remove stems and seeds. Then cut each half into quarters.
- Arrange on a plate, insides facing up.
- In a microwave save bowl, mix the black beans with the cumin, chili powder and rice.
- Microwave on high for 1 minute, stirring halfway through.
- Top with cheese and microwave for 1 minute more.
- Top each pepper slice with 1 heaping tablespoon of the cheese, bean and rice mixture.
