Ingredients:
Bread:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons vegetable oil
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 8 ounces lemon fat-free yogurt
- 1 large egg -- lightly beaten
Glaze:
- 2 tbsp powdered sugar
- 1 tbsp fresh lemon juice
Directions:
- Preheat oven to 350 degrees.
- Spray a 9x5 loaf pan with cooking spray.
- Combine flours, sugar, baking powder, baking soda, and salt in a medium bowl; make a well in center of mixture. Set aside.
- In a small bowl, combine oil, rind, juice, yogurt, and egg; stir well.
- Pour wet ingredients into the well in the center of the dry ingredients and combine, stirring just until moist.
- Pour batter into the loaf pan and bake 40 to 45 minutes, until the loaf is golden and a toothpick inserted into the center comes out clean. Let bread cool.
- To make the glaze, whisk together the powdered sugar and lemon juice in a small bowl.
- Pour the glaze over the top of the bread.
- For some extra flare, add some more lemon rind on top of the glaze to give the bread some decorative color.
