Lemony Bread

Ingredients:

Bread:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1 teaspoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 8 ounces lemon fat-free yogurt
  • 1 large egg -- lightly beaten

Glaze:

  • 2 tbsp powdered sugar
  • 1 tbsp fresh lemon juice

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9x5 loaf pan with cooking spray.
  3. Combine flours, sugar, baking powder, baking soda, and salt in a medium bowl; make a well in center of mixture. Set aside.
  4. In a small bowl, combine oil, rind, juice, yogurt, and egg; stir well.
  5. Pour wet ingredients into the well in the center of the dry ingredients and combine, stirring just until moist.
  6. Pour batter into the loaf pan and bake 40 to 45 minutes, until the loaf is golden and a toothpick inserted into the center comes out clean. Let bread cool.
  7. To make the glaze, whisk together the powdered sugar and lemon juice in a small bowl.
  8. Pour the glaze over the top of the bread.
  9. For some extra flare, add some more lemon rind on top of the glaze to give the bread some decorative color.
