Easy Beany Huevos Rancheros

Ingredients:
- 1 teaspoon garlic salt
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 cup black beans, drained and rinse
- 2 (7 inch) corn tortillas
- 1/2 cup shredded low- or fat-free Monterey Jack cheese
- 2 eggs
- 2 tablespoons of your favorite salsa
Directions:
- Preheat over to 375 degrees F.
- Lightly grease a baking sheet.
- Combine garlic salt, chili power, cumin and black beans in a microwave safe bowl. Microwave on high for 45 seconds.
- Place one tortilla on the prepared baking sheet.
- Sprinkle the cheese evenly over the tortillas.
- Top with the remaining tortilla.
- Cover the baking sheet with aluminum foil.
- Bake tortillas in preheated oven until cheese melts, about 5 minutes.
- Cook eggs over-medium in a non-stick skillet.
- To assemble huevos rancheros, place tortillas with melted cheese inside on a plate. Top the tortillas with black bean mixture, a layer of salsa, and the eggs.
