Easy Beany Huevos Rancheros

Ingredients:

  • 1 teaspoon garlic salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 cup black beans, drained and rinse
  • 2 (7 inch) corn tortillas
  • 1/2 cup shredded low- or fat-free Monterey Jack cheese
  • 2 eggs
  • 2 tablespoons of your favorite salsa

 

Directions:

  1. Preheat over to 375 degrees F.
  2. Lightly grease a baking sheet.
  3. Combine garlic salt, chili power, cumin and black beans in a microwave safe bowl. Microwave on high for 45 seconds.
  4. Place one tortilla on the prepared baking sheet.
  5. Sprinkle the cheese evenly over the tortillas.
  6. Top with the remaining tortilla.
  7. Cover the baking sheet with aluminum foil.
  8. Bake tortillas in preheated oven until cheese melts, about 5 minutes.
  9. Cook eggs over-medium in a non-stick skillet.
  10. To assemble huevos rancheros, place tortillas with melted cheese inside on a plate. Top the tortillas with black bean mixture, a layer of salsa, and the eggs.
