Fish Tacos

Ingredients:
Sauce:
- 1/3 cup sour cream
- ¼ cup chopped fresh cilantro
- 1 package Taco Seasoning Mix
Tacos:
- 1 pound tilapia, cut into 1 inch pieces
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 12 soft corn tortillas
Garnishes:
- 4 tsp lime juice
- taco sauce
- 1 cup shredded iceberg lettuce
- 1 tomato, diced
- 4 tbsp sliced olives
Directions:
- Combine sour cream, cilantro and 2 tbsp taco seasoning mix in a small bowl. Set aside.
- Combine fish, olive oil, lemon juice and remaining taco seasoning mix in another bowl.
- Pour into a large skillet and cook over medium-high heat for 4 to 5 minutes.
- Remove the fish mixture from the heat when the fish flakes easily when tested with a fork.
- Place the corn tortillas on a warm skillet for 2-3 minutes to warm and soften.
- Fill each tortilla with 1/12 of the fish mixture.
- Top with lime juice, taco sauce, lettuce, tomato, olives, and sour cream mixture.
