Fish Tacos

Fish Tacos

Servings: 4

Ingredients:

Sauce:

  • 1/3 cup sour cream
  • ¼ cup chopped fresh cilantro
  • 1 package Taco Seasoning Mix

Tacos:

  • 1 pound tilapia, cut into 1 inch pieces
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 12 soft corn tortillas

Garnishes:

  • 4 tsp lime juice
  • taco sauce
  • 1 cup shredded iceberg lettuce
  • 1 tomato, diced
  • 4 tbsp sliced olives

 

Directions:

  1. Combine sour cream, cilantro and 2 tbsp taco seasoning mix in a small bowl. Set aside.
  2. Combine fish, olive oil, lemon juice and remaining taco seasoning mix in another bowl.
  3. Pour into a large skillet and cook over medium-high heat for 4 to 5 minutes.
  4. Remove the fish mixture from the heat when the fish flakes easily when tested with a fork.
  5. Place the corn tortillas on a warm skillet for 2-3 minutes to warm and soften.
  6. Fill each tortilla with 1/12 of the fish mixture.
  7. Top with lime juice, taco sauce, lettuce, tomato, olives, and sour cream mixture.
