Sweet and Sour Edamame Salad

Ingredients:
- ½ cup soy mayonnaise, such as Soyanase
- 1 tablespoon sugar
- 1 tablespoon balsamic vinegar
- 1 cup frozen, cooked, shelled edamame; thawed
- 2 carrots, peeled and grated
- ½ cup dry roasted peanuts
- ½ cup raisins
Directions:
- In a small bowl, whisk together soy mayonnaise, sugar and balsamic vinegar to make the dressing.
- In a medium bowl, mix together edamame, carrots, peanuts and raisins.
- Pour dressing over salad and toss lightly to coat.
- Cover the medium bowl with plastic wrap and refrigerate for 1 hour.
