Sweet and Sour Edamame Salad

Ingredients:

  • ½ cup soy mayonnaise, such as Soyanase
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 cup frozen, cooked, shelled edamame; thawed
  • 2 carrots, peeled and grated
  • ½ cup dry roasted peanuts
  • ½ cup raisins

 

Directions:

  1. In a small bowl, whisk together soy mayonnaise, sugar and balsamic vinegar to make the dressing.
  2. In a medium bowl, mix together edamame, carrots, peanuts and raisins.
  3. Pour dressing over salad and toss lightly to coat.
  4. Cover the medium bowl with plastic wrap and refrigerate for 1 hour.
