Cool Citrus Salad

Ingredients:

Salad:

  • 2 grapefruit, peeled and cut into discs
  • 2 oranges, peeled and cut into 1/2 inch chunks
  • 3 tangerines, peeled and cut into 1/2 inch chunks
  • 1 can mandarin oranges, drained

 

Dressing:

  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 tablespoons poppy seeds
  • 1 tablespoon apple juice
  • 1/4 teaspoon olive oil

 

Directions:

  1. In a small bowl, mix honey, lime juice, poppy seeds, apple juice and olive oil to make a dressing for the salad.
  2. Place the grapefruit, orange, tangerine and mandarin oranges in a large bowl and toss with the dressing.
