Complementary Proteins Bowl

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup canned pinto beans, rinsed and drained
  • 1 cup cooked brown rice
  • ½ cup corn
  • ½ cup diced tomatoes
  • 4 tablespoons sliced black olives
  • 1 teaspoon garlic salt
  • 1 teaspoon cumin
  • 1 ripe avocado, sliced
  • 4 tablespoons sour cream

 

Directions:

  1. Combine all ingredients except the oil, avocado and sour cream in a mixing bowl.
  2. Heat oil in a medium skillet.
  3. Pour contents of mixing bowl into skillet and warm mixture, stirring occasionally, for 5 minutes.
  4. Place warmed bean and rice mixture into a serving dish and top with avocado and sour cream.
