Complementary Proteins Bowl

Ingredients:
- 1 tablespoon olive oil
- 1 cup canned pinto beans, rinsed and drained
- 1 cup cooked brown rice
- ½ cup corn
- ½ cup diced tomatoes
- 4 tablespoons sliced black olives
- 1 teaspoon garlic salt
- 1 teaspoon cumin
- 1 ripe avocado, sliced
- 4 tablespoons sour cream
Directions:
- Combine all ingredients except the oil, avocado and sour cream in a mixing bowl.
- Heat oil in a medium skillet.
- Pour contents of mixing bowl into skillet and warm mixture, stirring occasionally, for 5 minutes.
- Place warmed bean and rice mixture into a serving dish and top with avocado and sour cream.
