Citrus Chicken
Citrus Chicken

Ingredients:
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
- ½ teaspoon grated lemon peel
- ½ teaspoon grated orange peel
- 1 tablespoon olive oil
- 1 minced garlic clove
- ¼ teaspoon ground ginger or 1 teaspoon grated fresh ginger
- ½ teaspoon salt
- 8 oz. can mandarin oranges, drained
- 4 boneless skinless chicken breasts, about 4 ounces each
- ½ cup cashews
- 2 sliced green onions
Directions:
- Combine everything but the chicken, cashews and green onions.
- Place chicken breasts in baking dish.
- Cover with half of citrus sauce and bake uncovered at 350° for 20 minutes.
- Turn and cover with remaining sauce and bake for an additional 20 minutes or until juices run clean when you poke the chicken with a fork.
- Serve topped with cashews and sliced green onions.
