Citrus Chicken

Citrus Chicken

Servings: 4

Ingredients:

  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
  • ½ teaspoon grated lemon peel
  • ½ teaspoon grated orange peel
  • 1 tablespoon olive oil
  • 1 minced garlic clove
  • ¼ teaspoon ground ginger or 1 teaspoon grated fresh ginger
  • ½ teaspoon salt
  • 8 oz. can mandarin oranges, drained
  • 4 boneless skinless chicken breasts, about 4 ounces each
  • ½ cup cashews
  • 2 sliced green onions

 

Directions:

  1. Combine everything but the chicken, cashews and green onions.
  2. Place chicken breasts in baking dish.
  3. Cover with half of citrus sauce and bake uncovered at 350° for 20 minutes.
  4. Turn and cover with remaining sauce and bake for an additional 20 minutes or until juices run clean when you poke the chicken with a fork.
  5. Serve topped with cashews and sliced green onions.
