Caprese Sandwich

Caprese Sandwich

Ingredients:

  • 1 ciabatta bread roll, sliced lengthwise
  • 1 teaspoon extra-virgin olive oil
  • 1 slice fresh part-skim mozzarella cheese, sliced 1/4-inch thick
  • 1/2 large ripe tomato, sliced 1/4-inch thick
  • 1/4 cup fresh basil leaves
  • 1 tablespoon peppercinis
  • Coarse salt and freshly ground pepper

 

Directions:

  1. Brush olive oil on the inside top and bottom of the ciabatta roll.
  2. On the bottom half of the roll, arrange the mozzarella cheese, tomato slices and basil.
  3. Top with the peppercinis and season with salt and pepper to taste.
  4. Place the top half of the roll on the sandwich.
