Ingredients:
- 1 ciabatta bread roll, sliced lengthwise
- 1 teaspoon extra-virgin olive oil
- 1 slice fresh part-skim mozzarella cheese, sliced 1/4-inch thick
- 1/2 large ripe tomato, sliced 1/4-inch thick
- 1/4 cup fresh basil leaves
- 1 tablespoon peppercinis
- Coarse salt and freshly ground pepper
Directions:
- Brush olive oil on the inside top and bottom of the ciabatta roll.
- On the bottom half of the roll, arrange the mozzarella cheese, tomato slices and basil.
- Top with the peppercinis and season with salt and pepper to taste.
- Place the top half of the roll on the sandwich.
