Bruschetta

Bruschetta

Servings: 12

Ingredients:

  • 1 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 4 ripe Roma tomatoes, diced
  • ½ red onion, diced
  • 1 cup chopped fresh basil (substitute 1 tablespoon dried basil, if preferred)
  • 1 clove garlic, diced
  • 1 cup artichoke hearts, diced
  • 1 loaf whole grain French bread, sliced into rounds

 

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix olive oil and balsamic vinegar in a small bowl. Set aside.
  3. Combine tomatoes, onion, basil, garlic and artichoke hearts in a medium bowl.
  4. Pour olive oil and balsamic mixture over tomato mixture. Set aside.
  5. Arrange slices of French bread on a large baking sheet. Bake in the oven for 10 minutes, until bread is lightly toasted.
  6. Arrange bread on a large platter.
  7. Spoon 1 tablespoon of bruschetta onto each bread slice.
