Bruschetta
Bruschetta

Ingredients:
- 1 tablespoon olive oil
- 2 tablespoon balsamic vinegar
- 4 ripe Roma tomatoes, diced
- ½ red onion, diced
- 1 cup chopped fresh basil (substitute 1 tablespoon dried basil, if preferred)
- 1 clove garlic, diced
- 1 cup artichoke hearts, diced
- 1 loaf whole grain French bread, sliced into rounds
Directions:
- Preheat oven to 350 degrees F.
- Mix olive oil and balsamic vinegar in a small bowl. Set aside.
- Combine tomatoes, onion, basil, garlic and artichoke hearts in a medium bowl.
- Pour olive oil and balsamic mixture over tomato mixture. Set aside.
- Arrange slices of French bread on a large baking sheet. Bake in the oven for 10 minutes, until bread is lightly toasted.
- Arrange bread on a large platter.
- Spoon 1 tablespoon of bruschetta onto each bread slice.
