Berry Oatmeal Bread

Ingredients:

  • 2/3 cup packed brown sugar
  • ¾ cup low-fat milk
  • ½ cup vegetable oil
  • 2 eggs
  • 1 cup unbleached white flour
  • 1 ¼ cup whole wheat flour
  • 1 cup oats
  • 3 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 cup fresh or frozen blueberries

 

Directions:

  1. Heat oven to 350 degrees F.
  2. Grease bottom only of an 9” loaf pan.
  3. In a large bowl, mix brown sugar, milk, oil and eggs.
  4. Stir in dry ingredients and beat 30 seconds.
  5. Fold in blueberries and pour into pan.
  6. Bake 45 minutes or until toothpick in center comes out clean.
  7. Cool 10 minutes and remove from pan to cool completely on wire rack.
