Ingredients:

  • 1 can sliced beets or 2 roasted beets, sliced
  • 2 hard boiled eggs, peeled and sliced
  • Red leaf lettuce
  • 2 tbsp poppy seed dressing

 

Directions:

  1. Arrange slices of beets and egg over a bed of lettuce.
  2. Top with the dressing
